Semi-Healthy Pumpkin Peanut Butter Oatmeal Cookie

Happy autumn, everyone!  To celebrate my favorite season, I’ve made you my own special pumpkin peanut butter oatmeal cookie!  How is it special, you ask?  Well, it’s the only one of my cookies that’s not entirely bad for your health!

Yes, I know… the ingredients do include a bit of white flour and sugar.  But I’ve tried making cookies with only whole wheat flour and they ended up being fed to my dog.  She liked them, but her standards are low because she is a dog.  So I went half and half with this one.  Half the scrumptious white flour (which is still high in protein, may I add!) and half of the nutrient-dense wheat flour.  And as for the sugar, feel free to substitute an alternative no-calorie sugar if you’d like… but I personally don’t like those, as they have a tendency to declare war on weak stomachs.

Anyway!  Get ready for the satisfying whole grain, protein-ed peanut butter, antioxidant-rich honey, and vitamin-packed pumpkin I’ve thrown together for you!

My Pumpkin Peanut Butter Oatmeal Cookies

Ingredients

  • ½ cup all-purpose flour
  • ½ cup whole wheat flour
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup peanut butter
  • ½ cup white sugar
  • ¼ cup honey
  • 1 egg
  • 1 tsp vanilla extract
  • ⅓ cup canned pumpkin
  • 1 ½ cups quick oats

Directions

  1. Sift flour, cloves, nutmeg, cinnamon, baking soda, and salt together in a bowl.  Set aside.

2. In a large mixing bowl, cream peanut butter and sugar together.

3. Add honey, egg, vanilla extract, and pumpkin to butter-sugar mixture.  Mix well.

4. Slowly add flour mixture to the butter mixture.  Beat together until thoroughly mixed.

5. Stir oats into the dough.

6. Cover bowl with plastic wrap and refrigerate for 30 minutes.

7. Preheat the oven to 350 degrees.

8. After 30 minutes of refrigeration, roll dough into 1-inch balls and place onto a cookie sheet.

9. Bake for 9-12 minutes.

10. Enjoy!  You can share these with approximately 30 friends!
